Baked Norwegian Salmon with Basil Crust and Ratatouille Salsa

2 tablespoons + 2 teaspoons basil
3/4 cup eggplant
1 tablespoon garlic
1 1/2 teaspoon garlic
1 tablespoon + 2 teaspoons garlic
5 each norwegian salmon fillets, 7 oz.
1/2 cup + 2 tablespoons olive oil
3/4 cup onion
2 tablespoons parsley
3/4 cup red bell peppers
1 red chili peppers
as needed salt and pepper
1 tablespoon thyme, fresh
8 tomatoes, peeled, seeded, diced
4 slices whitebread
3/4 cup zucchini


1. Run the bread, garlic, parsley and basil in food processor until smooth and green. Place the portioned fillets on a baking tray, season with salt and pepper and cover with the basil crust. Bake in 350°F oven until the crust is light brown and the salmon is done (6-8 minutes).

2. For salsa, sauté diced vegetables in olive oil. Add diced tomatoes, and let sauce simmer for 10 minutes. Season with salt and pepper. Add thyme to sautéed vegetables at last minute.

3. Serve fillet of Norwegian Salmon with ratatouille and baked small potatoes.
