Soy Marinated Norwegian Salmon on Bamboo Skewers

1 tablespoon + 3/4 teaspoon butter
1 1/4 tablespoons butter
as needed cornstarch
1/3 cup creme fraich
1/4 cup garlic
1 tablespoon + 2 3/4 ginger, fresh root
1/2 cup + 2 tablespoons lemon juice
5 each norwegian salmon fillets, 7 oz., 3/4" cubed
as needed salt and pepper
8 each scalllions
1 1/4 each shallots
1/3 cup soy sauce
1/2 cup + 2 tablespoons sugar
2 tablespoons + 2 teaspoons white wine


1. Place Norwegian Salmon cubes on bamboo skewers. Put the lemon juice, soy sauce, wine, sugar, shallots, garlic and ginger in a blender and run for two minutes. Marinate the skewers in this sauce for 12 hours. Remove from marinade and grill or pan-fry the skewers until medium.

2. Boil the remaining marinade, whip in butter and add cornstarch to thicken the sauce.

3. Slice scallions and steam with a touch of water and butter. Remove scallions and thicken cooking liquid with the crème fraiche. Season with salt and pepper.

4. Serve Norwegian Salmon and sauce with salad or rice. Top with fried potato straws.
