1 cup dijon mustard
12 slices eggplant, sliced, grilled
6 each focaccia, 4"x4" square, split
cup honey
12 each hot smoked norwegian salmon, 3 oz.
1/4 cup lemon juice
12 slices vidalia onion, sliced grilled
12 slices yellow squash, sliced, grilled
12 slices zucchini, sliced, grilled
1. To prepare the sauce for the panini, combine mustard, honey and lemon juice. Hold.
2. To assemble each panini, layer the bottom half of one focaccia with 1 slice eggplant, 1 slice zucchini, 1 slice yellow squash, 1 slice onion and a piece of Norwegian Smoked Salmon. Top with 2 oz. panini sauce and top half of focaccia. Cut in half on a diagonal.
